Who doesn’t love a fresh blueberry muffin, hot out of the oven and topped with delicious butter?

We’ve recently played with our favorite blueberry muffin recipe and was able to come up with one that omits all cane sugar and white flour. It also includes a healthy serving of coconut oil from Tropical Traditions, which we all know is delicious.
Naturally Sweet Whole Wheat Blueberry Muffins
1 1/2 cups whole wheat flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup whole milk
1/3 cup honey
1/4 cup coconut oil (You can use Tropical Traditions or one listed below)
1/2 tsp vanilla
1/2 cup fresh blueberries
- In one bowl, combine all the dry ingredients.
- In a second bowl, combine all the wet ingredients (leave blueberries out).
- Add the wet ingredients to the dry ingredients and combine until everything is moist.
- Fold in the blueberries.
- Fill muffin cups 1/2-3/4 full.
- Bake at 400 degrees for 20 minutes.
